Keto Chicken & Chorizo Skewers with Roasted Pepper Romesco

Serves: 4


Ingredients:

2 chicken breasts, cubed

8oz Spanish chorizo, sliced

1 red onion, cut into chunks

1 zucchini, sliced

2 tbsp olive oil

1 tsp smoked paprika

Salt & pepper


Romesco:

1 roasted red pepper

1/4 cup almonds

1 garlic clove

2 tbsp olive oil

1 tbsp red wine vinegar

Salt & pepper

Instructions:

Thread chicken, chorizo, onion, and zucchini onto skewers. Toss with olive oil, paprika, salt, and pepper.

Grill skewers until chicken is cooked through.

Blend romesco ingredients smooth.

Serve skewers with romesco.
