
Keto Blackened Cod with Summer Ratatouille

Serves: 4
Ingredients:
4 cod fillets (6oz each)
2 tbsp olive oil
1 tbsp blackening spice (paprika, cayenne, garlic powder, thyme, salt, pepper)
1 small eggplant, diced
1 zucchini, diced
1 red bell pepper, diced
1 cup cherry tomatoes, halved
2 garlic cloves, minced
Instructions:
Rub cod with olive oil and blackening spice. Sear in a hot pan 3–4 min per side.
Sauté eggplant, zucchini, pepper, and garlic in olive oil until tender. Stir in tomatoes and cook 2 min more.
Serve cod over ratatouille.
