Grilled Peach & Coconut Cream Parfaits

Sweet grilled peaches layered with coconut whipped cream and a crunchy almond crumble, served in elegant glasses for a refreshing, naturally gluten- and dairy-free summer treat.

Ingredients:

4 ripe peaches, halved and pitted

1 tbsp maple syrup

1 can full-fat coconut milk (chilled overnight)

2 tbsp powdered sugar or maple syrup

1/2 tsp vanilla extract

1/2 cup almond flour

2 tbsp coconut oil

2 tbsp maple syrup

Pinch of sea salt

Fresh mint for garnish

Instructions:

Brush peaches with maple syrup and grill cut-side down until caramelized.

Whip chilled coconut cream with powdered sugar and vanilla until fluffy.

Mix almond flour, coconut oil, maple syrup, and salt; bake at 350°F for 10 min until golden for the crumble.

Layer grilled peaches, coconut cream, and almond crumble in glasses. Garnish with mint.
