Watermelon and Feta Salad

1 personal seedless watermelon, rind removed, cubed

1 cup loosely packed fresh mint

4 oz. crumbled feta cheese

3 tbsp. honey (optional)

2 tbsp. apple cider vinegar (optional)


Place the cubed watermelon in a large bowl.

Slice mint into thin strips.

Place the mint in the bowl and gently mix.

Top with feta cheese and serve immediately.


Optional ingredients: if your watermelon isn't as sweet as you were hoping it would be, mix together the honey and apple cider vinegar in a small bowl. Drizzle over the watermelon and gently toss.
