
Keto Shrimp & Zucchini Noodle Stir-Fry with Cashews

Serves: 4
Ingredients:
1 lb shrimp, peeled & deveined
4 medium zucchini, spiralized
1 red bell pepper, sliced
2 green onions, chopped
2 tbsp coconut aminos
1 tbsp sesame oil
1/4 cup roasted cashews
1 tbsp minced ginger
2 garlic cloves, minced
Instructions:
Sauté shrimp, ginger, and garlic in sesame oil until pink.
Add bell pepper and cook 2 min.
Toss in zucchini noodles and coconut aminos, cook 2–3 min.
Top with green onions and cashews.
