
Chilled Mango & Passion Fruit Rice Pudding (Gluten & Dairy Free)

A creamy, dairy-free coconut rice pudding layered with fresh mango and passion fruit, served chilled for a tropical, summery finish.
Ingredients:
1 cup arborio or sushi rice
2 cups coconut milk
1/2 cup water
1/4 cup maple syrup
1 tsp vanilla extract
1 large ripe mango, diced
2 passion fruits, pulp only
Pinch of salt
Instructions:
Simmer rice with coconut milk, water, maple syrup, vanilla, and salt until tender and creamy.
Cool completely.
Layer rice pudding in glasses with diced mango and passion fruit pulp.
