Cheesy Garlic Chicken Bomb Skewers
Ingredients:
For the Chicken Marinade:
- 1 lb (450g) chicken breast or thighs, cut into 1-inch cubes
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp lemon juice
For the Cheese Filling:
- 1 cup shredded mozzarella or cheddar cheese
- 1 oz cream cheese, softened
- 2 cloves garlic, minced
- 1 tbsp chopped fresh parsley (optional)
For the Skewers:
- Wooden or metal skewers
Optional Garnishes:
- Chopped parsley
- Extra shredded cheese
Instructions:
1. **Marinate the Chicken:**
- In a bowl, combine minced garlic, olive oil, paprika, oregano, salt, black pepper, and lemon juice.
- Add the chicken cubes and toss to coat.
- Cover and refrigerate for at least 30 minutes.
2. **Prepare the Cheese Mixture:**
- In a small bowl, mix shredded cheese, softened cream cheese, minced garlic, and parsley until well combined.
3. **Assemble the Skewers:**
- Take a chicken cube and make a small hollow in the center.
- Fill the hollow with a small spoonful of the cheese mixture.
- Carefully slide the filled chicken cube onto a skewer.
- Repeat this process, alternating chicken and cheese-filled pieces, until the skewer is filled.
4. **Cook the Skewers:**
- Preheat your grill or grill pan to medium-high heat.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
5. **Serve:**
- Remove the skewers from the grill and let rest for a couple of minutes.
- Optional: Sprinkle with extra shredded cheese or chopped parsley before serving.
