
Caramelized Onion and Bacon Jam

1 lb. bacon, cut into 1" pieces
1 yellow onion, finely chopped
2 garlic cloves, finely chopped
1/2 c. (107 g.) brown sugar
1/4 c. maple syrup or honey
1/3 c. apple cider vinegar
1 tsp. chili powder
Directions
In a large, heavy pot over medium heat, cook bacon, stirring occasionally, until crispy, 8 to 10 minutes. Transfer bacon to a paper towel-lined plate; reserve about 3 Tbsp. bacon fat in pot.
Reduce heat to medium-low. Add onion and shallots and cook, stirring occasionally, until onion is very softened and golden, about 15 minutes.
Stir in garlic, brown sugar, syrup, vinegar, chili powder, and cooked bacon. Bring to a simmer, then reduce heat to low. Cook, stirring occasionally, until liquid is reduced and thickened and onions are jammy and caramelized, 7 to 10 minutes more.
Let cool, then transfer to a container.
